The story of Alma Silvestre began in 2017, when Carlos Alberto Quiroga decided to move away from mass production and focus instead on quality coffee, with an emphasis on traceability and excellence. Unfortunately, a serious illness soon forced him to put his project on hold.
In 2020, his son Santiago Quiroga left his career as a lawyer to carry on his father’s dream. This is how Alma Silvestre was born: a family-run company dedicated to showcasing Colombian coffee through innovation, expertise and a constant pursuit of quality.

Process: Washed with double fermentation
This carefully developed washed double-fermentation process takes place at Finca Florencia. The coffee cherries are hand picked only once they have reached full maturity, then undergo a two-stage fermentation. The first stage is anaerobic, in sealed tanks, followed by a second aerobic fermentation.
This method allows Santiago to achieve a remarkably clean and aromatic cup, highlighting the sweetness and balance that are characteristic of the traditional Cenicafé 1 variety.
